MY FOOD PHILOSOPHY
My credo is to be able to deliver my customer THE BEST.
Every bite must be perfect. I myself select every raw material as previously undergone by a very meticulous inquiry. No food is served unless I had previously tasted it myself.
Although meal appearance is sensitive item to me, tasting will always be of prior consideration.
While constantly learning and improving new technics, I use top-of-the art instruments as I truly believe food and innovation come along. I think that food lead people to experiment all sorts of different taste sensations.
The way I establish a warm and friendly relationship with my customers while cooking comes along with my very own way of life and so to me, both the atmosphere and the food are making them happy”.
Sean’s unique cooking style has been shaped over the years mostly upon French cuisine’s influences as his natural curiosity led him to conceive audacious mixes and fusions meals between world, oriental and middle eastern cuisine as consistently opting for local products while hanging around local fresh markets.
Sean is a genuine autodidact acting out of passion, thrilled by the willingness of improving and enhancing his art. Each day he goes through experimental learning of new technics, looking for fascinating, challenging and fresh new products.
